Watermelon Snack with Feta, Mint & Walnuts

I’ve tried many summer snacks, but none of them really managed to be a good refresher for the heat these days like this snack. But watermelon does magic indeed, and combined with crisp and fresh peppermint, it’s just what you’ll need to also stay hydrated and enjoy a good, light snack.

I grew up with watermelons all summer long, from July till late August, and I giggle while I remember this, because all the beach days were cooled down with huge watermelon fruits eaten until one could breath no more 🙂

And yes, I do miss the huge ones (7-8 kg each watermelon) which you could find in almost any corners of the streets in my hometown, and on the side of the road if driving through the country..oh such a summerish memories for me. Unfortunately, here in Germany all of them are imported from Greece, Spain or Italy (I wonder why not from Romania as well, as we could spare a few).

Mixing cheese with watermelon may be awkward for some of you, but that’s one of the best sweet and salty combination you’ll ever try. Well, actually, the tastier and aged the cheese, the better, but ricotta is nothing to be ashamed with either. So go ahead, give it a try and explore new tastes, who knows what hidden pleasures you’ll find.

Don’t forget to roast your walnuts, even if it’s just a tiny bit, it will give the watermelon snack a whole different texture and taste. Plus, roasted nuts are just ADDICTIVE, so prepare your stash for later and roast a bit more.

I've tried many summer snacks, but none of them really managed to be a good refresher for the heat these days like this watermelon snack

Ingredients

  • 1/2 small watermelon, sliced 2 cm thick, and cut into triangular wedges
  • 100-150 gr feta cheese
  • 2-3 handful of walnuts
  • 20-30 medium sized mint leaves

Instructions

Cut 1/2 watermelon in 2 cm thick slices and then into triangular wedges.

Roast the walnuts in a cast iron pan until they become golden brown, for a couple of minutes only. Make sure you remove them from the pan once ready, as they will continue to cook, and you risk burning them.

Thinly chop the peppermint leaves, or if desired tear them with your fingers.

Sprinkle feta cheese on top of the watermelon wedges, add the chopped walnuts and peppermint leaves.

Serve immediately.
