Peach, Berries & Thyme Lemonade

It’s that time of the year when a lemonade will definitely save us from the midday heat and keep us well hydrated.

There are endless ways to make a summer lemonade, where the seasonal fruits are the main hero, but I wanted mine to be a bit with a tweak and I chose a mix of fruits and fresh thyme.

Well, thyme seems to be very present in all the desserts/fruit mixture I tried lately, as I find it brings the exact flavor that some fruits need, a floral/woodsy and delicate aroma that complements with the peaches an berries almost to perfection.

I think any dessert or summer drink should benefit from the good combo that some fruits and herbs have together, and this way, you’ll easily end up with a WOW aroma you wouldn’t really thought about.

For this lemonade I chose not to strain the pulp of the fruits, but to mix all the ingredients with cold water and serve it more like a dense drink. It’s so tasty, and I kind of like the crunchiness of the seeds from the raspberries and strawberries. But this part is pure optional, if you only like the juice, use a sieve when preparing the lemonade, and discard all the pulp.

Have you tried this flat peaches, also called paraguayos peaches, saturn peaches, and in many other ways (there might be a different name for each part of the world these are present)? I find them very good for desserts and this lemonade in particular, as they tend to be sweeter than the regular peaches and sometimes with less juice, and I’d say with a bit more flavor, which gives the lemonade a really nice summer scent.

It’s tempting to go maybe for more exotic flavors for this lemonade, but why not make use of the seasonal fruits which are so tasty and more important, locally grown in most cases?  Choose to make an impact with the food you buy and eat, for your body and also for the environment.

There are endless ways to make a summer lemonade, but I wanted mine to be a bit with a tweak and I chose a mix of fruits with fresh thyme.

Ingredients

  • 3 flat peaches (or normal ones)
  • 10-12 medium strawberries
  • 1/2 cup frozen raspberries + more for serving
  • leaves from 3-4 fresh thyme spears
  • 600 ml still water
  • 1 lime juice
  • 5-6 tsp runny honey
  • ice cubes to serve

Instructions

Wash and slice the fruits.

In a food processor, mix together the fruits, honey, lime juice and thyme leaves. Give it a good blend, until everything is smooth and well combined.

Strain the liquid in a large glass or jar and discard the fruits' pulp (I skipped this step)

I got 400 ml of fruit content. This will be combined with 600 ml water, or more if you prefer it more diluted. Now it's the time to add more honey if this is not sweet enough for you.

Serve with ice cube, paper straws and more frozen raspberries on top.
