Sweet Couscous Bowl with Roasted Fruits & Greek Yogurt

Have you ever tried sweet couscous? Well, if the answer is no, then go grab some and prepare this delicious fruit bowl, as you will just love it.

Make it all about seasonal fruits, and change the order of things by roasting them. You’ll get an amazing flavour which will make you repeat this over and over for the next weeks..well, that’s what I did after the first time I tried this combination.

There are some small secrets that made this so delicious and I’ll them share with you:

1. Use a few leaves of fresh thyme – will make all the difference – because herbs + fruits = LOVE

2. Add a small splash of balsamic vinegar

3. Enhance all this with a bit of nutmeg and cardamom. These are really my go to spices when I want to bake something or when some fresh fruits are involved. The flavours are definitely unique.

4. There’s no secret for making the couscous sweet, just add a teaspoon of honey when preparing it 🙂

This sweet couscous bowl can be easily served for breakfast, actually I think this was it’s main purpose, but I ended up eating it as a snack, and as a light dinner too. There are no rules here, feel free to add it into your routine as often as you want and whichever time of the day you prefer.

It’s amazing how every story I get to share through my cooking teaches me a new lesson of gratitude every day. Sweet Couscous Bowl with Roasted Fruits & Greek Yogurt

Have you ever tried sweet couscous? Well, if the answer is no, then go grab some and prepare this delicious fruit bowl, as you will just love it.

Ingredients

  • 500 gr seasonal fruits (I used apricots, flat peaches and strawberries)
  • 320 gr couscous, divided in 4 equal parts
  • 4-5 tbsp greek yogurt
  • 1 tsp thyme leaves
  • 2 tsp balsamic vinegar
  • 1-2 tsp sugar (based on how sweet your fruits are)
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • 2-3 tsp honey
  • bee pollen for garnish (optional)

Instructions

Preheat the oven at 170C.

In a small ceramic baking tray, add the fruits, stone removed if you are using apricots or peaches, and cut them in slices. Mix them with the nutmeg, cardamom, thyme, sugar and balsamic vinegar. Let them roast for 50 mins, or until you see that their juice is bubbling. When ready, allow to cool for a couple of minutes before assembling the sweet couscous bowl.

Prepare the couscous by adding hot water to cover. Let it soak all the liquid for 7-10 minutes (the instructions shoul be in the package as well). Stir in the honey and adjust the sweetness if needed.

Add in each bowl sweet couscous, 3-4 spoonfuls of roasted fruits and top with 1 tbsp greek yogurt.

Serve warm with bee pollen on top.
