I don’t know about you, but I’m in love with these oyster mushrooms, all crunchy and with an earthy flavor and definitely a very tasty replacement of meat.
The warm mushrooms salad with tomatoes and garlic dressing almost cooked by itself, without much hassle in your kitchen, as you sure have most of the ingredients at hand.
- 6 big oyster mushrooms
- 5-6 cherry tomatoes
- 3 garlic cloves
- 1 tsp spice mix (coriander, mustard seeds, bay leaves, pepper)
- 100 gr Greek olives
- chili
- fresh dill
- 2 tbsp olive oil
- lemon juice
- Preheat the oven at 200°C.
- Clean the oyster mushroom with a kitchen paper towel. Coarse slice them and set them in the baking tray drizzling half of the olive oil and sprinkle some salt and pepper. Roast them for 20-30 minutes, until golden-brown and crunchy.
- In a frying pan heat the remaining olive oil and add the crushed spice mix and garlic. Cook for 1-2 minutes.
- Add the half cut cherry tomatoes and saute for another 5 minute on medium heat. Add now the olives. Saute for another 2 minutes.
- Mix with the roasted oyster mushrooms and top with fresh dill and lemon juice, to taste.
- Serve warm with crostini bread.

Salata calda de ciuperci pleurotus si rosii
Nu stiu despre voi, dar eu m-am indragostit de aceste ciuperci pleurotus si am incercat sa le imbin cu diverse alte ingrediente si mereu s-au dovedit foarte versatile si un inlocuitor perfect al carnii.
Salata calda de ciuperci pleurotus si rosii s-a gatit aproape de la sine si tot ce va trebuie sigur aveti la indemana in frigider.
6 ciuperci pleurotus;
5-6 rosii cherry;
1 lingurita mix coriandru, foi de dafin si boabe de piper;
3 catei de usturoi;
100 gr masline;
chilli;
marar;
ulei de masline;
paine crocanta;
zeama de lamaie;
sare, piper dupa gust.
Intr-o tava de cuptor am pus ciupercile condimentate cu sare, piper si ulei de masline la copt pentru 20 de minute.
Intre timp, am pisat marunt intru-un mojar bobele de coriandru, piper si frunzele de dafin. Pe o tigaie, la foc mediu, am pregatit uleiul de masline peste care am adaugat usturoiul maruntit si condimentele. Am lasat aromele sa se patrunda 2-3 minute si apoi am adaugat rosiile taiate in jumatate. La final, adica peste inca 5 minute, am presarat si maslinele, si am lasat aroma sa se patrunda pentru inca 1 minut. Intraga compozitie a fost apoi adaugata peste ciupercile proaspat coapte. Am condimentat cu putina sare, piper, chilli, marar si cativa stropi din zeama unei jumatati de lamaie.
Eu am servit salata cu paine proaspat prajita si este o optiune foarte hranitoare pentru zilele de post care au ramas.
