Roasted Tomatoes & Feta Toast for breakfast? Bring it on!

I am a morning and a breakfast type of person, and I’m proud of that. But, figuring out what to eat in the morning, was never an easy job. Just between me and you now, there was a time, in my sweet high school days, when I was having small chicken schnitzels in the morning, not to starve until lunchÂ đŸ˜‚. Ok, so now imagine you don’t know this about me and let’s move on with our current story.

Not much work to do for this recipe, but you’ll need to reserve some time to roast the tomatoes, which can easily be done ahead of time and reheated in the morning and then serve it on a warm toast.

I’ve tried many combinations of roasted tomatoes along the time, but this one proved to be the most delicious. The tomatoes should roast in the oven at 160C for 45-50 min, for all the flavours to mix in good harmony.

The recipe is equally delicious with cherry tomatoes as well, these actually being sweeter than the ones I used.

Give the tomatoes a generous coating of good olive oil, and infuse them with a few splashes of balsamic vinegar, garlic, thyme and salt and pepper. Ahh, that garlic and olive oil smell, it’s just divine!

Roasted Tomatoes & Feta Toast for breakfast? Bring it on!

Ingredients

  • 3 fleshy tomatoes
  • 4-5 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 tsp fresh thyme leaves
  • 3-4 big garlic cloves
  • 1 small baguette, sliced
  • 300 gr feta cheese

Instructions

Wash and slice the tomatoes.

Preheat the oven at 160C.

Mix them with 4 tbsp of olive oil, balsamic, fresh thyme, garlic cloves (cut in half) and salt and pepper. Give them a good toss and transfer in the oven for roasting (45-50 mins).

The tomatoes should be ready when the margins are starting to look a bit charred and the flesh has softened. Now the garlic has a delicious texture, soft and full of flavors, but not burned.

Slice the baguette and toasted on the grill, pan or toaster.

Serve the roasted tomatoes on top of feta cheese slices, drizzle the remaining olive oil and serve with toast.
