I’d dare to say about this raw zucchini salad that’s the ultimate summer side dish or even meal if you wish.
Refreshing, crunchy, full of good nutrients and incredibly easy to make.
Did I say it’s also very versatile and you can “pimp it out” with pretty much any cheese or veggies you have at hand? Hm.. add some marinated fennel and say THANKS afterwards.
I tried mine in many combinations, and this one with goat cheese, nuts and a refreshing lemon and olive oil vinaigrette seemed to be the one I liked the most (that’s because I ran out of fennel).
In order to get a nice looking raw zucchini salad, slice the zucchinis with the vegetable peeler. Trim the ends of the zucchini, and carefully slice the vegetable into long, thin ribbons. You can watch this video for more accuracy.
If this doesn’t work for you, slice the zucchini with your pairing knife as thin as possible.
After you have the zucchini ribbons ready, arrange them in your favourite salad bowl, sprinkle some goat cheese, a mix of nuts and drizzle the lemon and olive oil vinaigrette.
And here you have the easiest summer dish ever: raw zucchini salad with goat cheese and nuts.
Toss it well and serve it as a snack or even a light dinner.

Ingredients
- 1 big zucchini or 2 small ones
- 50-60g goat cheese
- handful of nuts (any mix is good)
- 2 tsp lemon juice
- 2-3 tbsp olive oil
- salt & pepper freshly grated
Instructions
Trim the ends and peel the zucchini.
After removing the first part of the skin, slice the zucchini with the vegetable peeler into long, thin ribbons.
Arrange the zucchini ribbons on a plate or salad bowl, sprinkle the goat cheese, nuts and the vinaigrette.
Season with salt and serve immediately as a side dish or a light dinner.
