Mediterranean fennel and orange salad

This mediterranean fennel and orange salad is becoming a really must have in my summer diet as the weather is slowly starting to warm up.

Fennel is definitely an unique veggie, you can either love it or hate it, I don’t think you can go in between with this one, especially if you don’t use it very often in your traditional cuisine. Very popular in the meditarranean countries in Europe, like Italy, France or Greece, fennel was believed to be god’s food in ancient Greece. Well, I guess it’s about time to fully enjoy a royal salad 🙂

 

Mediterranean fennel and orange salad

Crunchy like a celery and with an unique taste of licorice, fennel makes a complete and incredibly tasty recipe along with some fresh and juicy oranges, and you don’t even need so many ingredients to make it very special. Simplicity wins all the time.

Serve it as a starter or as a side dish for some pork chops, chicken or salmon.

Ingredients
  • 1 large orange
  • 1/2 bulb of fennel
  • 2-3 spring onions
  • 1/2 head lettuce
  • 5-6 cherry tomatoes
  • raw pumpkin and sun flower seeds
  • 2 tsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp orange juice
  • freshly grounded salt and pepper
Instructions
  1. Finely chop the lettuce and place it into a salad bowl.
  2. Peel and thinly slice the fennel bulb and mix it with the lettuce.
  3. Thinly chop the spring onions and add it with the other ingredients.
  4. Peels off the citrus, slice it and mix it up with the rest of the salad. Add the cherry tomatoes and the seeds mix.
  5. Pour the dressing made of olive oil, balsamic vinegar and orange juice over the salad and season with freshly grounded salt and pepper.

Salata mediteraneana cu fenicul si portocale

Salata mediteraneana cu fenicul si portocale incepuse sa devina un must have in dieta mea de vara, din vreme ce si ea, vara, incepe sa-si faca simtita prezenta.

Feniculul face in mod cert parte din categoria legumelor cu o aroma aparte, pe care fie il iubesc, sau il detesti, iar cale de mijloc mai greu sa gasesti, in special daca nu este un ingredient folosit in mod frecvent in bucataria ta. Foarte popular in tarile de pe tarmul Mediteranei, ca Italia, Franta sau Grecia, fenicului era considerat in antichitate, un ingredient cu mare insemnatate pentru zei. In cazul asta, cred ca merit si eu o salata regala 🙂

Cu un gust undeva intre aroma lemnului dulce si intensitatea tulpinelor de telina, feniculul se imbina perfect cu prospetimea portocalelor si nici macar n-ai nevoie de prea multe ingrediente pentru a crea o salata completa si foarte aromata, pe care o poti servi si ca garnitura pentru cotlete de porc, pui sau somon.

1 portocala

1/2 buld de fenicul

1/2 salata verde

2-3 fire de ceapa verde

5-6 rosii cherry

mix de seminte pentru salata (floarea soarelui si dovleac) 

2 lingurite ulei de masline

1 lingurita otet balsamic

1 lingurita suc de portocale

sare, piper proaspat macinate

Toaca salata verde si aseaza-o intr-un bol pentru salata. Taie fenicului in felii subtiri. Curata portocala de coaja si de pielita alba si adaug-o peste restul de ingrediente din bol. Taie in felii rosiile cherry si presara semintele de floarea soarelui si dovleac. Adauga dressingul facut din uleiul de masline, otetul balsamic si sucul de portocale.
Serveste cu pofta!
