I don’t know if I could really call this juicy Panzanella a recipe, but it is definitely my favorite summer dish: fresh tomatoes, toasted bread, garlic, and fresh basil. The funny thing is that I’ve first tried mixing the ingredients into a proper salad on a moody and cold spring day, but Tuscany will always bring sun into your home, no matter the weather outside or your mood.
Is there anyone else thinking that one of the best mixed ingredients in this life are tomatoes-basil-garlic? Of course, with a drizzle of olive oil involved? I know you are nodding just now, as they are screaming Italy, sun, freshness and yummy food all together.
I’ve tried to bring my own signature to the classic recipe, and added a few extra ingredients, but just enough to keep the freshness intact with a boost of energy. Give it a try, you’ll thank me 🙂
- 2 -3 sliced toasted bread
- 2 handful of cherry tomatoes
- 2 spring onions
- 1 small cucumber
- 2 garlic cloves
- fresh basil
- olive oil
- balsamic vinegar
- salt and pepper freshly grated
- Toast the bread (I used the grill for that).
- Finely chop the vegetables and mix them in a big salad bowl to enhance the flavors.
- Break the toasted bread in small pieces and add it on top of the salad and add the olive oil, balsamic vinegar and salt and pepper freshly grated.
- You’ll most likely want more, so you’d better double the ingredients from the start 🙂

Panzanella – Salata toscana cu paine prajita
Nu-s chiar cele mai insorite si calduroase zile, ce-i drept nici prea mult nu pare sa mai fie, dar pentru o salata sanatoasa, inspirata de pe meleagurile Toscanei, nu e nicioadata un moment perfect sau recomandat. Panzanella, salata toscana cu paine prajita, rosii zemoase si dulci, ulei de masline si alte mici ingrediente pentru arome excelente, iti va revigora cu siguranta corpul.Â
Desi reteta este una foarte simpla, eu am ales sa mai adaug cate un element doua pentru o extra nota de savoare.
2-3 felii de paine prajita
2 maini sanatoase de rosii cherry
2 fire de ceapa verde
1 castavete mic
2 catei de usturoi
busuioc proaspat
ulei de masline
otet balsamic
sare, piper
Cat timp te ocupi de a marunti legumele, pune painea la prajit, in toaster, pe grill, sau taiata cubulete direct in cuptor, este exact dupa pofta inimii. Taie rosiile in patru, marunteste firele de ceapa, procedeaza la fel si cu busuiocul si castravetele si adauga usturoiul zdrobit si amesteca pentru a-si lua aromele.
De indata ce painea este perfect rumenita si crocanta (daca ai prajit felii intregi, rupe-le in bucati mici), adaug-o peste salata si presara sare, piper, ulei de masline si otet balsamic.
Te sfatuiesc sa faci de la inceput un bol ceva mai mare, e aproape garantat sa vrei sa dublezi portia :).
Daca ti-a placut salata, posibil sa mai simti o legatura foarte puternica si cu retetea cu bruschetta sau fettuccine cu pesto de patrunjel.
