A rainy day is always asking for some comfort food, or at least that’s what I’m caving for.
Something chocolate involved, easy to make, and, of course, as healthy as a cookie could be. There are always options for a good dessert that’s not involving tons of white and extra processed flour, butter or refined sugar. You just have to be a bit creative and with an eye open for the best ingredients.
This is the second recipe i’m trying with coconut flour and I’m super happy with the result: a nicely flavored desert, low in carbs and a perfect side cookie for your morning coffee. Yummyy.
I’m not very pretentious about the texture of the cookies in general, maybe because I’m not a very big fan of baked desserts, but I tend to appreciate more the taste and the flavor of a chocolate chip cookie, and of course, the abundance of chocolate inside. You know me, I love more fruits based desserts rather than heavy creamy cakes.

- 60 gr (1/2 cup) coconut flour
- 2 free range eggs
- 55 ml (1/4 cup) melted coconut oil
- 40 gr (1/4 cup) coconut sugar
- pinch of salt
- 1/2 tsp baking powder
- 1/4 tsp ground cardamon
- 1/4 tsp orange zest
- 50 gr (1/4 cup) dark chocolate chips
- Preheat your oven to 160 °C an prepare a baking tray lined with baking sheet.
- In a bowl, mix well together the eggs, sugar, coconut oil and and orange zest. Add now the coconut flour, baking powder, cardamon and the salt.
- Stir in well until everything is combined and there are no lumps. You can now fold in the dark chocolate chips.
- Using a tablespoon form 12-13 cookie dough and add them into the baking tray, flatten them with the back of the spoon. Add more chocolate chips if you wish.
- Bake for 15 minutes until nicely golden and let the cookies cool before serve them with your flavored morning coffee.

Fursecuri fara gluten cu fulgi de ciocolata
O zi ploiasa cere intotdeauna ceva comfort food, sau de ceva asemanator am eu pofta acum.
Ceva care presupune ciocolata, usor de facut si bineinteles un desert sanatos, sau, ma rog, atat cat se poate pentru niste fursecuri.
Exista intotdeauna optiuni ca un desert sa nu includa sute de grame de faina, zahar rafinat si pachete de unt, trebui doar sa fii ceva mai atent la ingrediente de calitate si modul in care au fost obtinute.
Acesta este cea de-a doua reteta pe care o incerc cu faina de cocos si ma declar super multumita de rezultat: un desert parfumat, scazut in calorii, care-mi acompanieaza perfect cafeaua de dimineata.
De regula nu sunt foarte pretentioasa la textura fursecurilor, asta probabil se datoreaza faptului ca nu sunt nici cea mai inraita fana a lor, dar tind insa sa preciez mai mult aroma si gustul unor fursecuri cu fulgi de ciocolata, si evident, abundenta ciocolatei din interior 🙂 Ma stiti doar, prefer mereu un desert fresh cu fructe.
60 gr faina de cocos
2 oua de tara
55 ml ulei de cocos
40 gr zahar de cocos
praf de sare
1/2 lingurita praf de copt
1/4 lingurita cardamon macinat
1/4 lingurita coaja de portocala
50 gr fulgi de ciocolata
Preincalzeste cuptorul la 160°C si pregateste o tava incapatoare pe care tapeteaza-o cu hartie de copt.
Intr-un bol amesteca bine ouale, uleiul de cocos topit, zaharul de cocos si coaja de portocala. Adauga acum si faina de cocos, praful de copt, cardamonul si sarea. Amesteca din nou, eliminand cocoloasele pe care le formeaza faina.
Folosind o lingura formeaza 12-13 fursecuri pe care le transferi in tava de copt, aplatizandu-le usor cu lingura.
Coace-le pentru 15 minute pana devin aurii si serveste-le alaturi la cafeaua de dimineata.
