Who doesn’t love a quick lunch or dinner, that’s also healthy, with a pinch of chilis and not to mention incredibly tasty ? Well, this easy and super fast spicy chicken and veggie stir fry has it all in one pan and you won’t need more than 15 minutes to fully enjoy your meal.
I guess these stir fries, besides AOP Pasta, are the next easiest dinner to cook and that’s why I love them. You don’t need much at hand, just a couple of ingredients, mainly vegetables, and you can also exclude meat altogether. Don’t forget about the soy sauce, rice vinegar and sesame oil. The rest it’s just optional to enhance the taste of your stir fry. I love when I can play around with the ingredients so much, with no restrictions and the result is still amazing.
When stir frying you only need a hot skillet or a wok, this way you will keep your veggies crispy on the inside, and nicely caramelized on the outside.
For this stir fry I decided to use chicken breast, snow peas or mangetout peas, broccoli, purple carrots and shiitake mushrooms, famous for their incredible rich texture and smoky flavor. You may be already drooling, but bear with me till the end so you can get the full recipe 🙂
The sauce it’s also super easy to make and I used the ingredients to my own liking and also avoided adding peanut butter, sugar or cornstarch, to keep everything as low in calories as possible. All you have to do is mix together the soy sauce, fish sauce, rice vinegar, sesame oil and one teaspoon of honey, and leave it aside until you start stir frying your veggies.
Serve this spicy chicken stir fry with wild basmati rice.
- 400 gr chicken breast
- 2 purple carrots
- 10 broccoli florets
- 100 gr mangetout peas
- 50 gr shiitake mushrooms
- 3 tbsp soy sauce
- 1 tsp fish sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey
- 5 cm piece of ginger
- 2 garlic cloves
- 1/2 tsp Asian spice mix
- 1 red chili
- fresh coriander
- Add 1 tbsp sesame oil to the skillet and make sure it’s hot enough before you use it.
- Cut the chicken breast in small stripes and add it into the skillet. Stir fry it with the Asian spice mix, on medium to high heat, until golden brown, for about 4 minutes on each side. Transfer the chicken to a plate, and set aside.
- Have the vegetables prepared before adding them to the skillet. Mince the garlic and the ginger, cut the carrots in julienne stripes and the broccoli florets in other small ones.
- Add the shiitake mushrooms, garlic, ginger and the rest of the vegetables onto the skillet and stir fry for 3 minutes, adding part of the stir fry sauce and mix well. Let it simmer for 2 minutes.
- Transfer the chicken onto the skillet and add the rest of the sauce. Toss to coat the chicken stripes and cook for another 2 minutes.
- Garnish with fresh coriander and red chili peppers. Serve warm with wild basmati rice.

Stir-Fry Picant de Pui cu Legume
Cui nu-i place un pranz sau o cina gatite rapid, care sunt si sanatoase, cu o piscatura de ardei iute si foarte gustoase pe deasupra? Tigaia picanta de pui cu legume le are pe toate si n-ai nevoie de mai mult de 15 minute s-o gatesti.
Cred ca stir fries, pe langa pastele AOP, sunt cele mai mai rapide si usor de gatit si tocmai de aceea le iubesc. N-ai nevoie de prea multe ingrediente, poti folosi majoritar pot fi legume, poti chiar exclude carnea daca asta ti-e dorinta, adauga niste sos de soia, otet de orez si ulei de susan, restul este deja optional, pentru potentarea gustului. Iubesc sa ma pot juca cu ingredientele, sa nu existe restrictii si totusi sa obtin o reteta delicioasa. Este exact ceea ce am si facut cu aceasta tigaie picanta.
Cand vrei sa faci un stir fry este neaparat nevoie sa folosesti o tigaie bine inchinsa sau un wok, evident, la fel de bine incins, in felul acesta vei pastra legumele fragede pe interior, dar in acelasi timp frumos caramelizate deasupra.
Pentru acest stir fry am decis sa folosesc pipet de pui taiat fasii, pastai mangetout, broccoli, morcovi mov si ciuperci shiitake, faimoase pentru textura lor si gustul usor afumat. Probabil ca deja salivezi, dar mai ramai putin cu mine pana ajung sa-ti povestesc exact cum am pregatit stir fry picant de pui cu legume.
Sosul este la fel de simplu de pragatit, eu am folosit ingrediente dupa placul meu, incercand sa evit adaosul de amidon, zahar sau unt de arahide. Tot ce trebuie sa faci este sa amesteci sosul de soia, uleiul de susan, sos de peste, otet de orez si o lingurita de miere de albine. Pastreaza-l deoparte pana ajungi sa sotezi legumele.
Serveste stir fry picant de pui cu legume cu o portie de orez basmati salbatic.
400 gr piept de pui
2 morcovi mov
10 frolete de broccoli
50 gr ciuperci shiitake
100 gr pastai mangetout
3 linguri sos de soia
1 lingurita sos de peste
2 linguri ulei de susan
1 lingura otet de orez
1 lingurita miere de albine
5 cm de ghimbir
2 catei de usturoi
1/2 lingurita mix condimente asiatice
1 ardei iute rosu
coriandru proaspat
Incinge 1 lingura de ulei de susan intr-o tigaie antiaderenta la foc mediu spre mare. Taie pieptul de pui fasii si adauga-l in tigaie. Soteaza cu 1/2 lingurita mix condimente asiatice pret de 4 minute pe fiecare parte. Dupa ce devine auriu, transfera pieptul de pui intr-o farfurie si lasa-l deoparte.
Pregateste-ti legumele inainte de a le sota. Taie morcovii julienne, marunteste ghimbirul si cateii de usturoi, si floretele de broccoli in unele mai mici. Adauga in tigaie ciupercile shiitake, usturoiul, ghimbirul si restul de legume. Caleste pentru 3 minute, adaugand parte din sosul pentru stir fry deja pregatit. Lasa sa fiarba la foc mic pentru inca 2 minute. Transfera pieptul de pui inapoi in tigaie si adauga restul de sos. Amesteca bine pana ce puiul este acoperit de sos si mai gateste pentru inca 2 minute.
Garniseste cu ardei iute rosu tocat marunt si coriandru proaspat.
Serveste cu orez basmati salbatic si multa pofta!
