Easy Flourless Brownies with Cherry Filling

I like to indulge from time to time, but let’s be true to ourselves, who doesn’t? But I also don’t want to feel heavy and bloated after either, so doing my own light and low calories desserts, came as a natural way to go for it, and I think these flourless brownies are just what I wanted.

Yeap, they are flourless, and for these brownies, a good amount of rolled oats, and a few basic ingredients just made wonders.

Is it that obvious that I made this recipe while I was wildly craving for some good chocolate dessert? Who, me? Busteed!

But what do you do when you don’t really like clafoutis (is this a new trend nowadays? everyone is making it) and cherry season started to boom in the farmers markets? Well, of course, you add them in your brownies, but you leave them raw, as they remain a bit al dente after the dessert is ready, and those fleshy bites are just delicious.

I’ve made this recipe before, but this one has some small tweaks and, trust me, you’ll just love it! Moist on the inside and delicious all together.

If time is really not on your side, which I doubt as this recipe is ready in no time, less than an hour baking included, you can make the chocolate icing 1 day before, and refrigerate it before using it. All you’ll need is greek yogurt, cocoa powder, honey and a bowl to mix it.

This recipe is definitely a keeper for me, as I admit, I’m not the most passionate baker out there, and a fast and light dessert, is just what I need for these summer days or when the cravings are pushing through.

Yeap, they are flourless, and for these brownies, a good amount of rolled oats, and a few basic ingredients just made wonders.

Ingredients

  • 70 gr rolled oats (less coarse if possible)
  • 60 ml milk (1.5 % fat)
  • 180 gr greek yogurt + 3 tbsp for chocolate icing
  • 70 gr sugar
  • 55 gr cocoa + 2 tbsp for chocolate icing
  • 1 egg
  • 1 tbsp honey
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • 13-15 cherries, pitted and halved

Instructions

Preheat the oven at 190°C.

In a food processor, add all the ingredients, except the cherries. Mix well for 30-40 seconds, or until everything is well combined, but not over mixed it.

Prepare a small baking tray, mine is 20cm X 20cm, by adding baking sheet and grease it with a bit of vegetable oil.

Transfer the batter into the tray and add the cherries on top of the brownies' batter. It's ok if they will do sink in the tray.

Bake the brownies for 20-25 mins (by this time, the batter will grow in the pan and start show some cracks on top, but if you leave them too long, the inside will be become too dry).

In the meanwhile, prepare the chocolate icing by mixing the remaining yogurt, cocoa powder and honey. combine well and set aside in the fridge until the brownies are ready.

Transfer the baking tray on a cool rack and wait 10-15 mins to spread the icing on top of the brownies. Let the brownies cool completely.

Serve with a glass of milk or with a cup of good green tea.
