Tomorrow we celebrate Earth Day! What other way to honor Mother Nature, other than be, at least for one day, more conscious about what and how we eat?

I’m a strong believer in a clean eating diet, in buying food locally and from suitable sources, in avoiding processed food, in not wasting the meals and the groceries, and the list could still go on. April 22, 2017 is the best day to reflect more about the way we are eating and the food footprint we are leaving behind, not just for our own well-being, but for our Planet’s too.

I’ve prepared this recipe to honor our Planet, using 80% local ingredients, and from sustainable sources, and this could easily be your lunch box tomorrow or your dinner tonight. Maybe you never thought that preparing your lunch box ahead of time, avoids using unnecessary plastic containers that you buy together with your food and then throw away into the garbage container. Just imagine how many plastic containers are used for just one meal and then thrown away.

Apple, kohlrabi and blue cheese salad

Ingredients
  • 150 grams green salad
  • 1 small apple
  • 1 small kohlrabi
  • 80 gr blue cheese
  • 1 shallot
  • a handful of mixed nuts
  • salt
  • pepper
  • 2 tsp honey mustard
  • 2-3 tbsp olive oil
  • lemon juice
Instructions
  1. Wash the salad thoroughly in cold water. Break the leaves in small pieces or cut the with a knife.
  2. Cut the apple and the kohlrabi in small slices, and add them on top of the salad.
  3. Chop the nuts and add them in the salad, along with the thin sliced shallot and the crumbled blue cheese.
  4. Prepare the dressing from the olive oil, mustard and lemon juice. Mix well and add it on top of the salad.
  5. Dress the salad immediately before serving.

Salata de gulie, mar si branza cu mucegai

Maine, 22 Aprilie sarbatorim Ziua Pamantului, si ce alt mod mai bun de a onora Mama Natura, decat o salata delicioasa din ingrediente crescute local si din surse sigure.

M-am ghidat mereu dupa principii sanatoase in pregatirea retelor, am cautat fermieri locali care sa-mi furnizeze ingredientele, m-am asigurat ca sunt din surse sigure, evit pe cat posibil hrana procesata, de orice fel ar fi ea, si cel mai important, evit sa arunc mancarea pe care o gatesc.

Am decis sa impartasesc cu voi reteta de azi pentru a celebra ziua Pamantului asa cum se cuvine, plus ceva inspiratie pentru cina sau pranzul tau de la birou. Probabil iei in calcul doar aspectele legate de calitatea mancarii atunci cand alegi sa-ti pregatesti pranzul de acasa, insa mai faci un lucru extraordinar, eviti folosirea ambalajelor de plastic, care ajung imediat la gunoi dupa ce ti-ai servit pranzul.

150 gr salata verde

1 mar 

1 gulie mica

80 gr branza cu mucegai

un pumn de nuci

sare, piper

2-3 linguri ulei de masline

2 lingurite mustar cu miere

zeama de lamaie

Spala salata la jet puternic de apa si rupe-o in bucatele mici sau taie-o marunt.

Taie marul si gulia in felii subtiri si adauga-le peste salata. Marunteste grosier nucile, taie ceapa in felii subtiri si faramiteaza branza cu mucegai. Adauga totul in bolul cu salata. Serveste cu dressing de mustar cu miere, ulei de masline si zeama de lamaie.
