God, I missed writing on this blog! After a crazy month of June, but nevertheless, a blissful one for me and my family 🙂 I finally managed to gather my thoughts and energy and start working again on my passion: this cooking blog. And I really hope that some of you missed my recipes 🙂

This is the time of the year when I miss the most my hometown in Romania with it’s salty air and windy evenings, but there’s no other way now than to just recreate the home feeling with this refreshing and flavored salad with shrimps, strawberries and poppy seeds dressing. We had this for dinner, but you can easily prepare this shrimp and strawberry salad for your lunch at work and fight the heat wave.

I grew up eagerly waiting for the strawberry season to come (and the cherry one) and I would only stop eating after a 1 kg of strawberries was completely empty. I still do this, but now I decided to mix them up in a big bowl of salad, just to enhance the taste.
***Little tip: spice up the shrimps with chili flakes, you don’t have to exaggerate if you don’t like spice food, but even in moderation will make your salad from mediocre to incredible!

Ingredients
  • 200 gr raw shrimps (1/2 lb)
  • ½ head spring lettuce
  • 2-3 spring onions or 1 medium red onion
  • 1 handful of strawberries
  • 1 handful of cherry tomatoes
  • 3 fresh cornichon cucumbers
  • 4 tbsp olive oil
  • 2 tsp poppy seeds
  • 3 tsp lemon juice
  • 2 tsp maple syrup
  • chili flakes
  • salt and pepper freshly grated
Intrustructions
  1. Make sure you have all the ingredients at hand. Preheat a frying pan with 1 tbsp of olive oil on medium heat.
  2. Spice the shrimps with chili flakes, salt and pepper freshly grated. Add them in the pan and sprinkle 1 tsp of lemon juice on top. Cook for 5-7 minutes, flipping them when they turn pink on one side.
  3. In a big salad bowl, add the chopped lettuce, sliced cucumbers, spring onions and halved cherry tomatoes.
  4. Separately, slice the strawberries and put them aside.
  5. In a small jar, mix the remaining olive oil, poppy seeds, maple syrup and lemon juice. Add ½ tsp of chili flakes and blend well all the ingredients.
  6. Top the salad with the cooked shrimps, strawberries and sprinkle the poppy seeds dressing.

Mix de vara: Salata de creveti, capsuni si dressing cu seminte de mac

Trebuie sa admit ca mi-a fost foarte dor sa imi astern gandurile, aici pe blog. Dupa o luna nebuna, dar binecuvantata si plina de bucurie pentru familia noastra, am reusit, intr-un final, sa-mi adun gandurile si energia pentru a reincepe sa lucrez la ceea ce-mi place cel mai mult: my cooking blog 🙂 Si chiar sper ca ti-a fost dor de retetele mele!

Acum este perioada in an in care mi se face cel mai dor de orasul in care am copilarit cu aer sarat si seri racoroase de vara, dar nu am gasit niciun alt mod sa pot alina dorul, decat printr-o salata racoroasa si super gustoasa cu creveti, capsuni si dressing cu seminte de mac. Am servit salata la cina, dar poate cu usurinta sa devina si pranzul tau pentru maine la birou.

Am copilarit asteptand cu nerabdate sezonul capsunilor (si al cireselor, si slava Domnului ca aproape coincid) si nu era nicicum chip sa ma opresc din mancat pana ce bolul cu 1 kg de capsuni, nu era golit. Inca fac la fel, doar ca de data asta, m-am decis sa combin capsunile intr-o salata, cu alte cateva ingrediente, pentru potentarea gustului 🙂
***Pont: condimenteaza crevetii cu fulgi de chili, chiar daca nu iti place mancarea picanta, chiar si in moderatie, poti transforma o salata obisnuita, intr-una incredibila.

200 gr creveti cruzi
1/2 salata verde
2-3 fire de ceapa verde sau 1 ceapa rosie medie
1 mana de capsuni
1 mana de rosii cherry
3 castraveti
4 linguri de ulei de masline
3 lingurite zeama de lamaie
2 lingurite seminte de mac
2 lingurite sirop de artar
fulgi chili
sare si piper proaspat macinate

Asigura-te ca ai toate ingredientele la indemana. Preincalzeste o tigaie antiaderenta la foc mediu si adauga o lingura de ulei de masline. Condimenteaza crevetii cu fulgi chili si sare si piper proaspat macinate. Adauga-i in tigaie impreuna cu 1 lingurita de zeama de lamaie si soteaza-i pentru 5-7 minute. Intoarce-i atunci cand devin roz pe o parte.

Intr-un bol incapator, adauga frunzele de salata tocate grosier, rochiile cherry taiate in jumate, castraveciorii si ceapa feliate. Separat, feliaza si capsunile si lasa-le deoparte.

Intr-un borcan de mici dimensiuni, amesteca uleiul de masline ramas, zeama de lamaie, semintele de mac si siropul de artar. Adauga si 1/2 lingurita de chili. Omogenieaza toate ingredientele.

Adauga peste mixul de salata crevetii si capsunile si dressing-ul cu seminte de mac.

Serveste cu pofta!
